JEAN ASKED: Is there a way one can make sour cream in a pinch when you need some for a recipe and don’t want to go to the store.

Cindy BriggsMY ANSWER: What I do is keep several small containers of PLAIN GREEK yogurt in the refrigerator. In fact, I’ve started replacing sour cream with plain Greek yogurt in many recipes because I prefer its flavor. The Greek yogurt is more nutritious with higher protein than regular yogurt or sour cream, and it has little or no fat. Yes, one can also run out of yogurt, but the yogurt can be mixed with berries or fruit therefore making it more versatile so I’m more inclined to remember to buy yogurt, which kind of automatically gives me something on hand. My favorite Greek yogurt is Oikos in the plain and the Fruit in the Bottom Style.
