My answer: I would begin by using a high quality vanilla, almond or lemon extract and/or replace a call for shortening with unsalted butter to see if those changes improve the flavor of the cookies. To me, shortening can sometimes give baked goods a greasy taste where butter gives a creamier flavor. If that doesn’t work, I’d suggest you start experimenting with different recipes to find one that’s more to your taste.
You didn’t say if you’re making a thin or thick, roll and cut type cookie (approximately 1/4″ thick) or the drop version. If you’re making the thicker, roll and cut or drop style, your recipe may need more sugar and you might try baking them a bit longer.
