Cucumber Orange Salad with Fresh Mint

1 large English or 4-5 “mini” cucumbers, sliced into rounds
2 (8 ounce) cans mandarin oranges, drained
4 tablespoons fresh mint, finely chopped
1 tablespoon fresh parsley, finely chopped (optional)
2 tablespoons sherry vinegar
1 teaspoon extra virgin olive oil
Salt and freshly ground black pepper to taste

In a medium bowl toss together cucumber rounds, mandarin oranges, mint, parsley, vinegar, olive oil; add salt and pepper to taste. Cover and refrigerate for 2 to 4 hours before serving. Yield: 4 servings
