A welcome wintertime fruit dip, Apple Brickle Dip, is meant to be served with fresh apple slices. But why not think outside the dip bowl and add pretzel sticks, regular or chocolate graham crackers, vanilla wafers and crisp apple chips to the serving plate? The basic ingredients for this sweet and creamy dip with a surprising toffee crunch can easily be kept on hand so it can be whipped up in minutes. This recipe is one of many quick and easy snacks and treats in my cookbook, Sweet Apple Temptations.
Apple Brickle Dip
2-8 ounce packages cream cheese, softened
1 cup brown sugar, firmly packed
2 teaspoons vanilla extract
2-10 ounce bags hard toffee candy pieces, finely crushed
4-8 large Honeycrisp, Granny Smith or Ambrosia apples, washed, cored, and sliced
Dip apples in lemon-lime soda to prevent discoloration. Dry thoroughly.
Mix first 4 ingredients together and serve immediately. Use apple slices for dipping along with your choice of graham crackers, pretzels sticks and crisp apple chips, if desired.
Note: This dip does not make up well in advance because the hard toffee bits melt. If your time is critical, the first three ingredients can be blended and left at room temperature, and then the toffee bits can be stirred in just before serving. Yield: 12-16 servings
