Ask Cynthia a Question – November 20, 2012

Alli asked: Any suggestions for softening and dissolving yeast when making yeast breads? Sometimes mine seems dead, even though the package shows it has not expired.

My answer: Make sure your water or milk is at 110°F. or less; just to be safe I add my yeast to the liquid at 100°F. I buy new/fresh yeast every time I make yeast breads, again, just to be safe. Making raised breads can take the better part of a day so I don’t like to take the chance with questionable yeast. Thank you, Alli, for your question and your interest in Ask Cynthia a Question. Happy Holidays!
