Quick and Easy Scalloped Potatoes with Ham
1 pound fully cooked ham, thinly sliced or chopped
6 to 8 medium Yukon Gold potatoes, washed, peeled and thinly sliced
1 8-ounce can chopped green chilies (optional)
1 or 2 24-ounce jars Classico 4 Cheese Alfredo (Light, if available)
2 cups sharp cheddar cheese, grated
Preheat oven to 350°. Place ham in bottom of 2-quart, glass casserole dish that’s been sprayed with cooking oil. Add potatoes; spread green chilies over potatoes. The green chilies are optional; they add a new twist to traditional scalloped or Au gratin potatoes. Next, pour Alfredo sauce over potatoes until they are fully covered (less sauce creates a more firm casserole, more sauce creates a moister or saucier casserole). Top with grated cheese.
Bake covered for approximately 40 minutes; remove lid and bake another 10 to 20 minutes, or until potatoes are tender and cheese is fully melted and browned on top. Yield: 6 to 8 servings
