Linda’s Refrigerator Lime Pie is a big creamy bite of citrus tang that’s as welcome as a summertime breeze. It’s quick and easy to prepare, leaving plenty of time to embrace a warm summer day and then close the evening with this light and refreshing dessert. The Limon version of this pie is my personal warm weather favorite, which is always a hit with my guests.
Linda’s Refrigerator Lime Pie
1 tablespoon lime zest
1 can sweetened condensed milk
2/3 to 3/4 small container whipped topping, thawed
3/4 cup fresh squeezed lime juice
2-3 drops green food coloring
1 graham cracker crust
Combine lime zest, sweetened condensed milk, whipped topping, lime juice and food coloring together in a medium-size mixing bowl. Whisk ingredients together until well blended. Pour mixture into graham cracker crust. Garnish with a lime rind twist or a mint sprig, if desired. Refrigerate 12 to 24 hours. Yield: 6 servings
Lemon Refrigerator Pie: Replace lime zest and lime juice with lemon zest and lemon juice; use 2-3 drops yellow food coloring in place of the green food coloring, prepare according to recipe directions.
Limon Refrigerator Pie: Replace 3/4 cup lime or lemon juice with 1/4 cup plus 2 tablespoons each lemon and lime juice.
