Ask Cynthia a Question – August 16, 2012

Cindy 2003 Photo smallHolly’s question: How do you enhance the flavor of a sugar cookie without adding additional sugar?

My answer: I would begin by using a high quality vanilla, almond or lemon extract and/or replace a call for shortening with unsalted butter to see if those changes improve the flavor of the cookies. To me, shortening can sometimes give baked goods a greasy taste where butter gives a creamier flavor. If that doesn’t work, I’d suggest you start experimenting with different recipes to find one that’s more to your taste.

You didn’t say if you’re making a thin or thick, roll and cut type cookie (approximately 1/4″ thick) or the drop version. If you’re making the thicker, roll and cut or drop style, your recipe may need more sugar and you might try baking them a bit longer. Let me know if you’d like to see some tried and true sugar cookie recipes, I’ll be happy to share my two favorites. Thank you, Holly, for your question and your interest in Ask Cynthia a Question.
