Dark Chocolate Cream Cheese Frosting

Chocolate Cream Cheese Frosting8 ounces regular cream cheese, softenedDark Chocolate Cream Cheese Frosting
4 tablespoons unsalted butter
3 tablespoons cream
3 cups powdered sugar, fluffed or sifted
2/3 cup Special Dark cocoa powder
Dash of salt
2 teaspoon pure vanilla extract

In a large mixing bowl beat together cream cheese, butter and cream. Add the sugar, cocoa and salt; beat until well blended.

Reduce mixer speed to low and add vanilla; beat until smooth. Use immediately for cakes and cupcakes. For frosting cookies and graham crackers, cover and chill slightly before spreading. Yield: Will frost 1 2-layer cake, or 1 single-layer oblong cake or 24 cupcakes

Cook’s Note: For mocha frosting add 1/2 to 1 teaspoon instant coffee granules. Or, for a south-of-the-border flair add 1/2 teaspoon ground cinnamon.
